Frozen treat!
The temps are rising and we are deep into June already! It’s crazy to think 2023 is almost half over. Yikes!
We are also deep into baseball season.
2 boys.
2 different age groups.
Quite often their games are at the same time.
Sometimes their games are in the same town, but not usually.
Thank goodness my husband and I can divide and conquer. I do love watching them play baseball, but this year, catching them all (haha, so punny) just isn’t possible. It’s been a fun season and both boys are enjoying their time on the ball diamonds.
With the summer heat, I have really been enjoying this simple treat that I can grab before heading to a game, going out to ride horse, or just when I need something small and sweet.
Frozen chocolate bananas. Yum.
I slice about 3 bananas, about an inch thick, lay them out on freezer paper and toss them into the freezer for at least an hour.
Then melt 1 cup semi sweet chocolate (dark chocolate would also be delish) with 1 tablespoon coconut oil.
Once melted I simply spoon a little chocolate on top of each banana slice. If you want more chocolate, you could also dip the banana slice into the chocolate, then I toss them all back into the freezer for another hour, making sure there is a little space between each banana slice. Once frozen I store them in a plastic container in the freezer, usually out where I can sneak one on my way out the door.
 These are so good!
